Breakfast for Dinner?

I really need to use the rest of the pork chops up, but I didn't want to repeat so early. So tonight I decided on Breakfast. Pancakes, sausage, hash browns and an omelette were all on the menu. The only downfall I found was my griddle was too small and I needed to do everything in batches.

First up were the pancakes. I wasn't sure how they would turn out so I did a small test batch. They cooked quicker than I thought, but they could have stayed in longer to get more golden. Next was the sausage. These took forever as they were frozen, maybe about 5-8 minutes. The hash browns, being already shredded only needed to brown. So when the sausage was done, I filled one side with the potatoes and set them to cook. Just when they were changing color, I added the eggs to the other side. In a matter of minutes, the eggs were nice and fluffy.

The pancakes were a little cold when I was ready to eat, but they weren't bad. If I had to do it again, I would cook the pancakes while the hash browns are cooking. I would have to do more batches of pancakes, but that would let the potatoes cook a little longer.

Chicken Quesadillas

Tonight I took an easy way out and made chicken quesadillas with corn flour tortillas. They were quite tasty and quite filling.

First dinner in...

For the longest time I've been wondering what I wanted to post about. Now I know at least what I'll start with.

Tonight was my first night cooking in my hotel room. I purchased a sandwich press and a few food supplies. For my test run, I didn't keep it simple. I decided upon pork chops stuffed with cornbread dressing and sautéed ravioli. Oh and as an appetizer I had crab cakes. They were all delicious and it turned out better than I had thought they would. Sorry I didn't get a picture of the crab cakes but they were gone quite quickly.
